INAMA, San Bonifacio There are only a handful of top Soave producers and Stephano walks his own stylish path. The vineyards are on volcanic rock and give a weight of fruit well suited to full-flavoured wines. The Sauvignon is extraordinary, tasting more like a rich Viognier, but beware of the Fume (the oaked version), as previous vintages to this were massively oaked.
